MINI OMELETTES WITH SPINACH AND FRESH HERBS

Ingredients
- 15 ml (1 tbsp) olive oil
- 1 small onion, finely chopped
- 500 ml (2 cups) chopped spinach
- 60 ml (1/4 cup) chopped fresh herbs (basil, mint, parsley)
- 8 eggs
- Salt and pepper to taste
Steps
1 - Preheat the air fryer to 200°C (390°F).
2 - Brush a mini muffin tin (that fits into the air fryer) with oil or spray with grease, then set aside.
3 - In a non-stick pan, heat the oil. Cook the onion for 2 minutes.
4 - Add the spinach and fresh herbs. Cook for 1 to 2 minutes. Season with salt and pepper to taste and remove from heat. Allow topping to temper.
5 - In a bowl, beat eggs vigorously. Season with salt and pepper to taste and add tempered spinach topping to egg mixture.
6 - Add the omelette mixture to the reserved mini molds.
7 - Reduce the temperature of the air fryer to 150°C (300°F) and cook 12 to 15 minutes (or until oven at 190°C (375°F) 18 to 20 minutes).
8 - Remove the mini omelettes from the air fryer.
9 - Serve immediately.
