SEASONED MIRROR EGGS - 3 FLAVORS

Ingredients

Pesto-pistaches :
- 3 ml (1/2 tsp) olive oil
- 5 ml (1 tsp) pesto + 1 tsp water
- 15 ml (1 tbsp) pistachios, chopped
- 1 egg

Piment-oignon :
- 3 ml (1/2 tsp) olive oil
- 15 ml (1 tbsp) peperonate (chilli and garlic)
- 1 egg

Cacio e pepe :
- 3 ml (1/2 tsp) olive oil
- 60 ml (1/4 cup) grated parmesan cheese
- Pepper, to taste
- 1 egg
Steps
1 - In a non-stick pan, heat the oil. Add the pesto and water. Cook 30 seconds. Add the pistachios. Cook 15-30 seconds.
2 - Add the egg. Cook 1-2 minutes (or until desired doneness, the white cooked and the yolk runny). Remove from the heat.
3 - Serve immediately. Serve with greens and a slice of toast.
4 - Follow the same technique for the other versions.
