SOUND, DATES AND MAPLE CRUMBLE MUFFINS

Ingredients

  • 1 double bran and date muffin mix by Isabelle Huot, Doctor of Nutrition
  • 80 ml (1/3 cup) canola oil
  • 180 ml (3/4 cup) 1% fat milk
  • 1 egg
  • 125 ml (1/2 cup) 0% fat plain yogurt

Crumble

  • 80 ml (⅓ cup) pecans, chopped
  • 125 ml (½ cup) puffed rice
  • 30 ml (2 tbsp) maple syrup
  • 30 ml (2 tbsp) maple chips


Steps

1 - Preheat oven to 180°C (350°F).


2 - Place 12 paper or silicone baking cups in a muffin pan.


3 - In a bowl, place the muffin mix. In another bowl, combine the canola oil, milk, egg, and plain yogurt and mix well. Pour this second mixture over the dry mixture until you get a smooth batter.


4 - Make the crumble by mixing all the ingredients together.


5 - Portion the muffins and spread the crumble over the top, tapping lightly to incorporate a little into the mixture.


6 - Bake for 20 minutes.
