CAULIFLOWER DOUGH PIZZA

Ingredients
Cauliflower Dough
- 1 small head of grated cauliflower
- 60 ml (1/4 cup) grated mozzarella
- 30 ml (2 tbsp.) flour
- 1 egg
- 15 ml (1 tbsp.) olive oil
- 1 pinch of dried oregano
- Salt and pepper, to taste
Toppings
- 125 ml (1/2 cup) tomato coulis
- 125 ml (1/2 cup) grated mozzarella
- 1/4 red peppers in strips
- 5 sliced mushrooms
- 60 ml (1/4 cup) arugula
- A few fresh basil leaves
Steps
1 - Preheat the oven to 200°C (400°F).
2 - Cover a baking sheet with parchment paper.
3 - Place the grated cauliflower in a daisy over a pan of boiling water to steam for 5 to 7 minutes.
4 - Let cool slightly then press the cooked cauliflower into a clean cloth or coffee filter to remove as much moisture as possible. *This step is crucial to avoid an overly wet dough.
5 - In a bowl, combine the cooked and drained cauliflower, grated mozzarella, flour, egg, olive oil, oregano, salt and pepper.
6 - Transfer the dough to the prepared baking sheet and spread it to the desired shape (round or rectangular) in a layer of approximately 1 cm. thick.
7 - Bake the dough for 10 minutes, or until it is golden brown and slightly crispy on the edges.
8 - Remove the dough from the oven and spread the tomato coulis evenly over the surface of the dough.
9 - Add the grated mozzarella, peppers and sliced mushrooms. (You can add vegetables of your choice)
10 - Return the pizza to the oven and cook for 8 to 10 minutes, or until the cheese is melted and lightly browned.
11 - Remove the pizza from the oven and garnish with arugula and fresh basil leaves, to taste. Cut and serve immediately.
