10 TIPS FOR VARIED MUFFINS

For an on-the-go breakfast or a quick snack, muffins are often an option to consider. They're easy to bake and very practical, since they can be baked in advance and easily frozen. Now, what if we had fun creating endless variations?

From my muffin mixes, on sale here in the Breakfast section of my online boutique, here are 10 tips for adding variety to your muffins:

10 tips to revamp your muffins

1- A simple addition of walnuts will please you and make your muffins even more nutritious. In addition to a crunchy texture, walnuts contain plant-based omega-3 fatty acids (ALA), fiber and antioxidants. A punchy addition!

2- Breakfast lacking in protein? Snacks that aren't very satisfying? Why not add a little protein powder of your choice to the mix? Mix, place in the pans and bake! A nourishing delight!

3- A little taste of fruit? Make a fruity heart with my fruit and chia spreads! Just before baking, place a spoonful of the spread in the center of the preparation and place in the oven. When you're ready to eat them, you'll discover a melting center, still warm and delicious!

4- Are you more of a toast-in-the-morning type? Why not put the entire preparation into a rectangular baking tin and turn it into a healthy cake loaf? Simply add 125 ml (½ cup) milk to the initial mixture of double bran and date muffins and bake for 20 to 45 minutes. The result is a soft, golden bread. Cutting slices makes it easy to spread your favorite nut butter on top!

5- A quiet morning? Think about making pancakes! Take the double bran blueberry muffin mix and add 2 eggs, 30 ml (2 tbsp.) vegetable oil and 500 ml (2 cups) milk or vegetable drink. Pour half a ladleful into the center of a hot nonstick skillet and cook for about 3 minutes, or until the mixture shows small holes on the surface. Turn over, cook for a further 30 seconds and repeat! Accompanied by berries and a drizzle of maple syrup, these pancakes are divine!

6- Looking for fluffy pancakes? Reduce to 125 ml (½ cup) the amount of milk to be added to the double-bran blueberry muffin mixShape into balls and place on a parchment-lined baking sheet. Crush the balls with a fork and bake according to the baking instructions. The result is golden cookies, ideal for dipping in milk or coffee!

7- Want to bake a dessert for the whole family, but don't have the time? No problem! Prepare double bran and date muffin mix by changing the amount of milk from 250 ml (1 cup) to 375 ml (1 ½ cups). Place 500 ml (2 cups) of berries in a glass dish to cover the bottom and drizzle with 60 ml (¼ cup) maple syrup. Coat the tops of the berries with 500 ml (2 cups) of the muffin mix and bake at 350 ℉ for 35 minutes. Let stand and serve with yogurt or ice cream. Bet you can't get enough!

8- Are you a fan of carrot cake? Prepare my double bran and date muffin mix and add grated carrots and mix. Once each mixture has been added to the individual moulds, make a hole and add a teaspoon of cream cheese. Garnish with walnuts and bake until the muffins are cooked through. These are carrot and cheese cupcakes you won't want to miss!

9- For an original snack or fruity dessert, hollow out a fruit that's well-suited to baking, such as an apple or pear. Fill with muffin mix and bake until the muffins are completely cooked. Just before serving, drizzle with maple syrup or garnish with a dollop of yogurt. Enjoy without compromise!

10- Here's a fun activity to do with the kids on your next camping trip. Cut oranges in 2 and scoop out the flesh (save it for fruit salad!). Then pour the muffin mixture into the 2 half-spheres. Cover with aluminum foil and place the balls on the coals for 30 minutes, turning occasionally. You'll be able to peel your muffins with your family! Psst! It also works on the barbecue!
