- 20 to 25 asparagus, trimmed (base cut off)
- 15 ml (1 tbsp) olive oil
- Salt and pepper to taste
Cottage Cheese Cream:
- 250 ml (1 cup) 2% cottage cheese
- 30 ml (2 tbsp) 15% cream
- Lemon zest to taste
- Salt and pepper, to taste
- 250 ml (1 cup) dry garlic bread, finely chopped
- 30 ml (2 tbsp) grated parmesan cheese
1 - Preheat the oven to broil.
2 - On a baking sheet, spread the asparagus.
3 - Add the olive oil. Season with salt and pepper to taste.
4 - Bake on the top rack for 3 to 4 minutes.
5 - Remove from the oven and set aside.
6 - In the container of the food processor, place all the ingredients for the cream of cottage cheese. Mix until smooth and creamy.
7 - In a bowl, mix all the ingredients for the pangrattato.
8 - In the bottom of a plate spread the cream of cottage cheese.
9 - Add the grilled asparagus. Top with pangrattato and serve!
