BUTTERNUT SQUASH SOUP WITH COLLAGEN

Ingredients
- 15 ml (1 tbsp.) extra-virgin olive oil
- 1 onion chopped
- 2 cloves garlic chopped
- 2 carrots, cut into cubes
- 1 potato, peeled and cubed
- 1 butternut squash, peeled and cubed
- 1 L (4 cups) reduced sodium vegetable broth
- 3 spoons of NU•RISH collagen complex powder
Toppings
- Homemade bread croutons or pumpkin seeds
Steps
1 - In a saucepan over medium-high heat, add the olive oil.
2 - Add the onion and garlic. Cook for 2 minutes.
3 - Add the carrots, potato, butternut squash and broth.
4 - Cover and simmer for 20 minutes.
5 - Remove from heat and add the collagen powder.
6 - Add all ingredients in a blender and pulse until smooth and even.
7 - Pour into a serving bowl and enjoy!
