Recette de truite aux tomates mi-confites. Un plat coloré et santé pour profiter de l'été. Une recette d'Isabelle Huot Docteure en nutrition.


  • 1 container (150 g) of cherry tomatoes on the vine
  • 2 cloves of garlic, sliced ​​very thin
  • 30 ml (2 tbsp.) of olive oil
  • 600 g trout fillets
  • 15 ml (1 tbsp.) olive oil
  • 1 clove of garlic, chopped
  • 125 ml (1/2 cup) ) chopped onion
  • 375 ml (1 ½ cup) tomato sauce
  • 1 Bar to Cook Mediterranean bar
  • 60 ml (1/4 cup) mixed olives
  • Salt and pepper to taste


1 Preheat the oven to broil (500°F).

2 Take a baking dish (approximately 8 x 12).

3 Place the cherry tomatoes and garlic slices. Season with salt and pepper. Drizzle with olive oil.

4 Place the pieces of fish on top. Brush with olive oil. Season with salt and pepper.

5 Cook in the oven for 10 minutes . Remove from the oven. Leave to rest for 5 minutes.

6 In a non-stick pan, heat the oil. Add the garlic and onion. Cook for 1-2 minutes.

7 Add the tomato sauce, the Bar to Cook bar and the olives. Bring to the boil. Cook gently for 10 minutes.

8 On a serving plate, place the grilled trout fillets.

9 Garnish nicely with the tomato and olive sauce. Add a bunch of semi-candied tomatoes and garnish with fresh herbs to taste.

10 Serve immediately.
