LA BRIGITTE MEAL SALAD - THE BOHEMIAN CRUNCHY

Ingredients

  • 1 green apple, cut into thin slices (with a mandolin)
  • 1 apple gala, cut into thin slices (with a mandolin)
  • 1 small fennel (or 2 branches of celery), cut In brunoise (small dice of 1 cm by 1 cm)
  • 1 French shallot, chopped
  • 250 ml (1 cup) of fresh grapes, cut in two
  • 80 ml (1/ 3 cup) of Grenoble
  • 80 ml (1/3 cup) of dried cranberries, chopped
  • 45 ml (3 tb. (2 cups) of watercress
  • 100 g of cooked Nordic shrimp
  • 125 ml (1/2 cup) of Greek yogurt 0 % M.G. (diluted with 30 ml of water)

Dressing

  • 30 ml (2 tbsp) of mayonnaise
  • 45 ml (3 tsp) of apple cider vinegar
  • 30 ml (2 tbsp) of fresh parsley, chopped
  • with a taste of salt and pepper


Steps

1 - Mix together yogurt, water, mayonnaise, vinegar, half the parsley, salt and pepper. Reserve.


2 - in a bowl put the apples, fennel, l 'shallot, grapes, grenoble nuts, cranberries, pumpkin seeds and watercress. Add the Dressing and mix delicately.


3 - garnish with chopped parsley and add the shrimp!
