APPLE MUFFINS

Ingredients
Garniture croustillante
- 125 ml (1/2 cup) large rolled oats
- 30 ml (2 tbsp) whole wheat flour
- 15 ml (1 tbsp) brown sugar
- 30 ml (2 tbsp) melted butter
- 3 ml (½ tsp) ground cinnamon
Ingrédients secs
- 375 ml (1 ½ cup) whole wheat flour
- 375 ml (1 ½ cups) large rolled oats
- 180 ml (3/4 cup) brown sugar
- 8 ml (1 ½ tsp) baking powder
- 5 ml (1 tsp) ground cinnamon
- 3 ml (½ tsp) baking soda
- 3 ml (½ tsp.) teaspoon) of salt
Ingrédients humides
- 2 eggs
- 125 ml (½ cup) of milk
- 125 ml (½ cup) of homemade apple puree
- 60 ml (¼ cup) vegetable oil
- 5 ml (1 tsp) vanilla essence
Autre
- 250 ml (1 cup) apples, peeled and cut into small cubes
Steps
1 - Preheat the oven to 200°C (400°F).
2 - Place 12 paper or silicone cases in the muffin tin.
3 - In a bowl, combine all the ingredients for garnish. Set aside.
4 - In a bowl, combine all the dry ingredients. Set aside.
5 - In another bowl, combine all the wet ingredients. Pour in the dry ingredient mixture and then mix.
6 - Add the cubed apples then mix gently.
7 - Pour the mixture evenly into the 12 cups. Garnish with a small amount of crispy topping.
8 - Cook in 15 to 20 minutes (or until a toothpick inserted in the center of the muffins comes out clean).
9 - Remove from the oven. Allow to cool before unmolding. **Keeps 3 5 days in an airtight container.
